Vegan Mulligatawny Soup

 As you all know exploring plant based versions of traditional dishes is a passion of mine and during this cold season soups and stews have played a major part in All About Greens weekly menu planning.

Recently I have been working on culinary variations of the magnificent Mulligatawny soup. A satisfying dish full of flavour and different textures which make it ideal for hearty lunches or light suppers.  Added to which the soup is highly nutritious and budget friendly too.

This piqued my interest so I thought I would take a little look at the history behind this magnificent soup and share my findings with you.

The Mulligatawny soup has roots deep in the heart of Indian cuisine. Originating from the flavoursome "rasam," a spicy pepper water, it made its way to the Western world during the British colonial era. The fusion of Indian spices and British influence was the foundation of the distinctive Mulligatawny soup we know and love today—a perfect canvas for a vegan twist and there are many variations of this traditional dish.

At All About Greens HQ, I am always on the lookout for recipes that are not only tasty but are also nourishing and healthy too. The magical Mulligatawny soup proves to be one of those dishes that ticks all of these boxes.

Lentils,  one of my go to protein ingredients, takes centre stage in this soup, offering a hearty dose of both protein and fibre. This combination ensures a satisfying meal, perfect for those seeking a well rounded plant based bowl of goodness.

The vibrant array of vegetables, carrots, celery and onions adds not only colour and flavour but also an abundance of vitamins, minerals, and antioxidants. It's a rainbow combination of healthy ingredients that contribute to the overall well being of anyone eating this wonderful soup.  I have recently started using frozen mixed vegetables for ease and speed and this is a great little hack when you are short on time.

Turmeric, with its golden hue and earthy taste, brings not just a delightful colour to the soup but also the powerful anti-inflammatory properties of curcumin. This touch of healing makes Mulligatawny a wholesome addition to a balanced and health conscious vegan diet.  I have been using fresh turmeric more recently which adds an even more punchy flavour to any dishes cooked.

Customising dishes to suit our palates is what really creates the magic, there are so many variations that can be added here, curry powder, tomato puree and cooked rice to name but a few…the choices and preferences are all yours!
